St. Patrick’s Day corned beef recipe
This Wednesday we will all be feeling a touch of the Irish, and when you think about St. Patrick’s Day one of the first things that comes to mind is corned beef. It is traditionally served with cabbage and boiled potatoes, and of course, it must be washed down with a nice pint of Guinness. There are a number of ways to prepare corned beef, and it is truly delicious. This is a recipe for glazed corned beef. Put on your green apron, listen to some Celtic tunes, and get your Irish on in the kitchen on Wednesday, March 17th!
Glazed Corned Beef
Ingredients:
- 4 pounds of corned beef brisket
- one cup of water
- one cup of apricot preserves
- 1/4 cup brown sugar
- 2 tablespoons soy sauce
- pepper to taste
Directions:
Wash the corned beef and place it in a baking dish. Add the water, and then cover the dish tightly with aluminum foil. Bake the beef at 350 degrees for about two hours.
Combine the apricot preserves, soy sauce, and brown sugar in a mixing bowl. Spread the glaze evenly over the corned beef.
Bake the uncovered beef at 350 degrees for another 25 to 30 minutes. Baste occasionally with pan drippings.
Always slice corned beef against the grain.
