Tasty potato soup

When it is cold outside, it is a nice feeling to simply prepare some ingredients for a nice hot soup and place them on the burner and let them simmer. Back in the day, the process of making soup or stew in the winter served a dual purpose; you were making a meal for the family of course, but you were helping to warm up the house in the process. Though this may sound quaint by today’s standards considering the modern heating units that we use, those units are expensive to run and they drain environmental resources. So even today the warming of the kitchen through some slow cooking helps, and it is just a cozy feeling that warms the soul as well as the living space.

Another nice thing about soups is that many of them are easy to prepare with ingredients that most of us have routinely lying around the kitchen pantry. So you can whip up a very tasty and satisfying meal without a lot of fuss or expense. With that in mind, today we will share a potato soup recipe.

Ingredients:

3 peeled potatoes

2 onion slices

1 quart of milk

4 tablespoons of butter

2 tablespoons of flour

1 teaspoon of salt

1/4 teaspoon of celery salt

a pinch of pepper

cayenne pepper to taste

1 tablespoon of chopped parsley

Bring a pot of salted water to boil and cook the potatoes until they are soft. Use a food processor or strainer to blend the potatoes to a fine texture. You then scald the milk with the onion slices, remove the onion, and slowly add the milk to the potatoes. In a soup pot, melt the butter and mix the remaining ingredients together, and then add the potato/milk mixture and stir while simmering for several minutes before adding the parsley and serving.
